"Brown Shugga' Substitute"
This sad holiday season we didn’t have the brewing capacity to make our favorite seasonal brew, the widely feared BrownShugga’ Ale. You see we had a couple of really good years (thank you very much) and so heading into this season while we are awaiting the January delivery of a new brewhouse we are jammin’ along brewing 80 barrels of IPA and PILS and such every 3 hours. A couple of months back we realized that since we can only brew a mere 60 barrels of Shugga’ every 5 hours, that we were seriously screwed. For every case of Shugga’ brewed, we’d short 3 cases of our favorite daily beers. It’s a drag. This year, we brewed something that we think is also cool and brews more like our daily brews. The new brewhouse will help insure this kind of failure never happens again. It’s a mess that we can not brew our BrownShugga’ this year and we suck for not doing it. There is nothing cool about screwing this up this badly and we know it. Maybe we can sue our own sorry selves. There is no joy in our hearts this holiday and the best we can hope for is a quick and merciful end. F*@& us. This totally blows. Whatever. We freaking munch moldy donkey butt and we just want it to be all over...
So this substitute beer is a ‘Cereal Medley’ of Barley, Rye, Wheat, and Oats…. Full of complexishness from the 4 grains, and weighing in at 7.85% abv, Then joyously dry-hopped for that big aroma and resinous hop flavor.

Bone Snapper Rye Whiskey is a straight-forward rye made in Lawrenceburg, Indiana. It is distilled from a mash of 95% rye, 5% malt, and limestone-filtered water drawn from the deep aquifers underneath Southern Indiana. It is put into barrel at just under 120 proof and aged for 24 months in new American oak barrels.
Once the whiskey is ready, 20 barrels are selected to be batched together – truly a small batch – and fresh water is added to bring the proof down to a potent 108 proof. This takes the sharp edges off the whiskey while maintaining its full flavor and power.
Bone Snapper is bottled without chill filtration and hand labeled to let you know which batch you’re lucky enough to sip.

Backbone Bourbon is meant to be sipped and savored. It was developed with the discerning bourbon drinker in mind. Many bourbons available on the market today are “cut” with water to a specific proof. This is done for good reason but we feel that a good part of the whiskey's character is lost during this process. Bourbon matures in oak barrels and takes years to evolve. During this time, it develops character. It is molded by the quality of ingredients and the barrel in which it was aged. We feel this is the backbone of the whiskey and we want to preserve this originality and purity.

We also want to give consumers the choice of how strong they want to drink their bourbon. We recommend adding water or ice blocks to get it to your desired level of strength. "What if?" In 1999, Miles and Marko became fascinated by the idea of distilling bottle-ready beer into whiskey - a first in the whiskey industry.

They soon embarked on an amazing 3.5 weeks of distilling 24/7 in the family's classic Alambic Charentais Pot Still. It took 20,000 gallons of great Pilsner to create just 1000 gallons (24 barrels) of Whiskey.

Charbay Whiskey was made from European Two-Row Barley, grown and malted in British Columbia, which has much more concentrated flavors than the more mainstream 6-row barley. Made into beer by professional brewers. Choice hops were added just before distillation to create the floral and spice notes that Marko envisioned in his mind. No peat was used during malting; our brewers, as well as Marko and Miles, the distillers, prefer to focus on the pure grain and hops flavors.

Aged 6 years in new American White Oak barrels (charred #3 'Gator skin') and an additional 8 years in netural vessels to continue evolving without additional oak extraction.

Tasting notes
This is bone dry Riesling made in a sort of Alsatian manner. With German clones. Dry. Tasty. Seriously Versatile. Put all kinds of lovely vittles into your face with it and explore what Riesling can do. Smells like apple, peach and pear decorated with delicate flowers, honey and spice. Not surprising to catch a whiff of petrol as it matures. Tastes like tree fruits, citrus and a touch of the tropics, maybe even a little hot slate. Dry, rich, bright, spicy and lengthy. Put it right inside your face.

Brew nº2: Cognac

This complex beer was brewed in cognac barrels that have contained cognac for at least 40 years. You will experience a mild alcohol aroma that is balanced by vanilla overtones coming from the wood and a fresh fruitiness reminiscent of apricots. The mouthfeel is velvety with flavors of honey coming through with every sip.

Brew nº3: Madeira
This beer is comparable with the beer aged in the Armagnac barrels, however the aroma is much more subtle. You can experience a mild alcoholic aroma, with a balanced flavour of vanilla, coming from the wood, and a fresh fruitiness reminiscent of apricot. Tasting this will give you a velvety taste, the honey like sweetness masks the degree of alcohol. The aftertaste is dominated by almond so the comparison with Amaretto isn't far away. In short, the perfect dessert beer!

Brew nº5: Sherry
The different flavors of this beer are manifested in a sublime order to achieve a harmonious yet complex taste sensation. 
Besides the instantly recognizable dry sherry flavor there also is room for the fresh and spicy scents of vegetative raw celery and a green pepper character. This follows in subtle fruity aromas of peach and candied apricot, with an undertone of tea extracts. Finished with a nutty touch, reminiscent of broken walnuts. The mainly fresh flavors that make up the smell of the beer are masterfully supported by more robust flavors. In the flavor we can find the typical duality of balsamic, compromise between sweet and sour, and finally conclude with a notion of liquorice. But this story is not over; the aftertaste brings a perfect marriage between alcohol warming and soothing sweetness.

Anchor Zymaster No.7 begins in our distillery, where we prepare a 100% rye malt mash.  We blend that sour mash with our regular mash which results in this IPA unique piquancy.  The dry tartness from the sour mash, the bittetrness from the Nelson Suavin Hops, and the subtle spiciness from the rye meld to create a singular, thirst quenching IPA with a clean, crisp finish and aromatic notes of grapefruit, mandarin orange and passion fruit.

Our Winter ESB (Extra Special Bitter) may have the word “bitter” in its name, but the key to this style is balance. The combination of malts and hops creates a toasty, fruity flavor. Our ESB is dry hopped with a US grown hop varietal called Williamette, which has a pronounced spicy, lemon flavor.

In the early 1970’s, brewers in London and the south of England expanded the range of beers available in pubs, reacting to the wave of European lagers moving into the British pub scene. In addition to the ordinary bitters and pale ales, brewers developed recipes for stronger premium ales like ESB, special bitter and special pale ale. These beers contributed to the English traditional ale revival of the 1980’s, making their way into the beer portfolios of many American craft breweries.
