Introducing Slantshak Beef Jerky
2012 was an exciting year for new products at The Wine and Cheese Place. We brought a fantastic new wine importer, United Estates, to the St Louis market, we launched our barrel aged beer program, not to mention the wildly popular Sweet Sophie Barrel Aged Maple Syrup, and introduced Duraham’s Tracklements Smoked Salmon from Ann Arbor Michigan. It’s a new year and we are excited to introduce a new product SlantShak Beef Jerky.

“SlantShack Jerky was founded under a slightly slanted roof in New York City, where nine friends set out to create the jerky of their dreams. Today, we work with family farms throughout the Northeast to source sustainably raised grass-fed beef, and partner with Vermont Highland Cattle Company to handcraft jerky with a focus on quality, freshness, and flavor.” -
Slantshak Beef Jerky
SlantShack’s 100% Grass-Fed Beef
SlantShack Jerky is proud to offer beef jerky made from 100% Grass-Fed Cattle lovingly raised by Vermont Highland Cattle Company and other local Vermont and New York farmers.

Great beef is the result of a complex combination of factors including breed, feed, care and age. What makes Vermont Highland Cattle Company beef special is the attention paid to all the details that help achieve great taste. Highland cattle, originally from Northern Scotland, are one of the oldest beef breeds. They have evolved to produce naturally lean, tender beef without hormones or growth stimulants.

Vermont Highland Cattle Company’s cows enjoy 100% pasture grass, and never receive growth-promoting antibiotics or hormones. They treat their cattle with dignity and respect, and ranch managers do whatever is necessary to reduce the amount of stress in the animals’ day-to-day lives.

Benefits of Grass-Fed Beef:
More Nutritious: While most beef cows consume an unnatural diet of grain for a portion of their lives, grass-fed cows eat only grass, as cows evolved to do. The seeds and nutrients they feed on result in healthy and delicious meat. Some research suggests grass-fed beef has as much as 10 times more beta-carotene, three times more Vitamin E and three-times more omega-3 fatty acids as a result.
More Humane: Scientists haven't quantified the benefits of clean water, fresh air and freedom to roam, but it all adds up to a happier, healthier herd.
More Tasty: Meat takes on distinct flavors based on terrain, weather, soil, and water. This is the way beef is supposed to taste.
Less Wasteful: It takes a lot of land to raise beef naturally. By rotating the animals through various pastures through the seasons, ranchers preserve native biodiversity, improve soil fertility, and eliminate the waste-management issues associated with confined animal feedlots (a major source of water pollution at conventional farms).

Deschutes Hop Henge Experimental Imperial IPA...$4.99 / 22oz
Seasonal Release
Hop Henge Experimental IPA is our annual exercise in IBU escalation. An outrageous amount of Centennial and Cascade hops are added to each barrel, with a heavy dry-hop presence as well. It is dense and muscular, with a blend of crystal, pale and carastan malts creating an overall biscuity characteristic. It’s all hop, no apologies.

Old Raj is back!

Cadenhead Old Raj Gin..$37.99
92 Proof
Cadenhead's Old Raj Gin is distinctive in that it contains a measure of saffron, the rare and costly spice derived from the crocus flower. In addition to a slightly spicy flavour, this also imparts a pale yellow colour to Old Raj. The addition of saffron is undertaken personally by the Company master blender in order to ensure a consistency in flavour and colour each time Old Raj is bottled.

Cadenhead's Old Raj Dry Gin....$41.99 / 750ml
110 Proof
Clear with a silvery straw cast. Aromas of citrus marmalade, cucumber relish, potpourri, peppery spice cake, and pine cone-like juniper follow through on a smooth, supple entry to a dry-yet-fruity full body with great depth, vibrancy and balance. Finishes with a long, zesty, floral, saffron accented fade. A powerful, well balanced and distinctive gin.

Glenmorangie Ealanta

In stock now!
Oak is from the Mark Twain Forest right here in Missouri!

Glenmorangie Ealanta...$104.99
Dr. Bill Lumsden, Head of Whisky Creation, journeyed from the banks of the Dornoch Firth to the Mark Twain National Forest in the Missouri Ozark Mountains in the quest for the finest wood in which to mature Glenmorangie. Aged exclusively in hand-selected virgin casks made of slow-growth American oak, air-dried and never seasoned with Bourbon (as most other whisky casks are) ‘Ealanta’ is possibly the purest expression of whisky that Glenmorangie has ever created.

Charred virgin American oak casks for intensity and complexity with rich flavors of vanilla
The oldest Private Edition ever created; a 1993 vintage (19 year old whisky) matured in the finest American White oak for a complex yet incredibly smooth whisky
Elegant packaging reflects the spirit’s wood influence
A 46% ABV, non chill-filtered collector whisky available until stocks are exhausted

Aroma: Toffee, butterscotch, vanilla, and a curious hint of cooked fruits. Classic Glenmorangie mentholic top-notes are interwoven with an unusual nuttiness,
reminiscent of Brazil nuts in toffee
Taste: Candied orange peel, sugar coated almonds, sweet vanilla and marzipan
Finish: The taste goes on and on, finally giving way to some oak-derived spices, such as clove, ginger and a hint of aniseed

Back in stock! North Coast Grand Cru

A very limited release from North Coast.
Also online - click here

North Coast Grand Cru....$13.99 / 500ml
North Coast Brewing Co., Fort Bragg, CA, is releasing its newest premium beer, Grand Cru. Reminiscent of the brewery’s Gold Medal-winning Twentieth Anniversary Ale, North Coast Grand Cru is brewed with pilsner malt and agave nectar, then aged in oak bourbon
barrels.

“We’ve had a good time exploring the brewing possibilities outside of the standard beer styles,”
said Mark Ruedrich, Brewmaster and President. “Grand Cru doesn’t fit neatly into any established category. We brew it exclusively with Pils malt with an addition of agave nectar in the kettle. The beer is then fermented with the same Belgian yeast that we use to ferment Le Merle. It’s subtle, complex and lightly hopped with a deceptive 12.5% ABV, and aging it in oak gives this unique beer an extra dimension. The result is really champagne-like.”  North Coast Grand Cru will be available in July in 500 ML bottles with a cork and wire finish" -- North Coast Press Release

North Coast Barrel Aged Old Rasputin XV

Stout aged in Bourbon Barrels
North Coast Barrel Aged Old Rasputin XV...$19.99
Every year we age a special batch of our much-loved Russian Imperial Stout in Bourbon barrels. The depth, intensity, and complexity of the flavor profile of this special release, like its predecessors, make it a worthy tribute to Old Rasputin.

Prior to 2010, Barrel-Aged Old Rasputin was released in such limited quantities that it was available only at the North Coast Brewing retail shop in Fort Bragg, California. However, we received so many requests for this beer that we began producing enough Barrel-Aged Old Rasputin to put into broader, but still limited, distribution.

Spain - 94 Parker Points and $17

We just scored 20 cases....
2010 Finca Villacreces Pruno...$16.99
Ribera del DueroWow! From a vineyard adjacent to Spain’s greatest as well as most expensive red wine, Vega Sicilia, this 2,500-case cuvee made for Eric Solomon is spectacular. Full-bodied with an opaque purple color in addition to an extraordinary bouquet of charcoal, wood smoke, creme de cassis and blackberries intermixed with hints of acacia flowers and licorice, this stunning, multidimensional 2010 is loaded. Its texture, richness, complexity, purity and length result in a wine that considerably over-delivers. Normally, one would expect to pay $75 to $150 for a wine that tastes like this, but this beauty can be yours for $20 or less! Moreover, it will keep for a decade.

Isle of Jura Prophecy

Isle of Jura Prophecy...$65.99
In the early 1700’s the Campbells of Jura evicted a wise old seer. Bristling with resentment, she prophesised that the last Campbell to leave the island would be one-eyed with his belongings carried in a cart drawn by a lone white horse. Over time the story became legend and the prophecy drifted from memory. Until 1938, when Charles Campbell, blind in one eye from the Great War, fell on hard times and led his white horse to the old pier for the last time.

Heavily peated with fresh cinnamon and spicy sea spray
Bottled in a traditional style without chill filtration to deliver an authentic taste of 1938. Flavours of peat smoke, fresh cinnamon and spicy sea spray with tarry bonfire notes give way to hints of soft licquorice and nutmeg.

Gold Best in Class at the 2010 IWSC Awards.

"Like Jura “Superstition,” this is a peated expression of Jura whisky. Compared to Superstition, Prophecy seems richer, heavier, sweeter, deeper, leafier, with more tarry notes. I’m also picking up more spice (cinnamon, anise, dark chocolate) and some fruit (lime, mandarin orange, green apple), with a subtle, yet intriguing, suggestion of burnt popcorn. Prophecy is also bottled at 46% and not chill-filtered—which I think brings out more subtle nuances and texture in the whisky. The only tradeoff is that I’m picking up less of the Jura spirit and less sea characteristics. But this is a small tradeoff, considering how much more you’re getting with Prophecy. Promoted as a limited annual release." - Malt Advocate

From Class Magazine
45% alc./vol.
Producer: Distillerie Combier, 48 Rue Beaurepaire, Saumur, France
As the brand name suggests, these pimento allspice bitters are the result of Dale DeGroff's enthusiasm for this previously almost forgotten cocktail ingredient. They are made by infusing and distilling a blend of select botanicals with allspice berries and Mediterranean spices.
Appearance: Clear, chestnut brown with dark golden edges.
Aroma: Pungent clove, liquorice and anise with cinnamon.
Taste: Bitter barky palate with hot black pepper, cinnamon and clove spice. More subtle nutmeg and ginger.
Aftertaste: Mouth drying lingering clove. As the term 'Aromatic Bitters' on the label suggests, this is stronger and punchier than pimento dram liqueurs.

10 year old White Burgundy!

2003 Domaine Ferret Pouilly-Fuisse Tete de Cru “Les Perrieres”....$31.99

Wow, I was quite surprised by this wine, as 2003 was a famously hot vintage and Pouilly Fuisse are not known for their long life, but the 2003 Ferret “Les Perrieres” is still amazingly fresh and vibrant. This wine also represents the last vintage made under the uncompromising eye of Madame Ferret (before she passed and the estate was sold to Louis Jadot). A rare treat to find a White Burgundy that is so perfectly aged priced $20 less than current release price (2010 sells for $50). At $31.99 this wine is a fantastic value.

Après Wine Group

Recap of the first Après Wine Club Favorite Red Wine $35-$50
First off thanks to all who attended our first Après Wine Group. We tasted 8 wines from 6 different vintages and 3 different countries:

2008 Doyenne AIX, Red Mountain Washington State
2000 Dehesa La Granja, Ribera del Duero Spain
2002 Mi Sueno Syrah, Napa Valley California
2007 Saint Damien Gigondas, Rhone Valley France
2001 Lopez de Heredia Vina Tondonia Reserva
2005 Dain Wines Syrah, Las Madres Vineyard Carneros California
2006 Antica Cabernet Sauvignon, Napa Valley California
2006 Duckhorn Howell Mountain Cabernet, Napa Valley California

All of the wines were tasted blind, which can be both a fun and humbling experience, but most importantly it is a learning experience.  One of the guests pointed out to me the bitter orange/orange peel character in the Gigondas made it clear to him that is was a Grenache based wine from the Southern Rhone, and while I had also guessed the wine to be a Rhone and was able to pick out the smell easily I had never before made the connection between the bitter orange flavor and Grenache from the Rhone. It’s these type of connections that make this tasting format so enjoyable and especially educational for me. Happily all the wines showed well, the 2006 Duckhorn being the almost unanimous choice for Wine of The Night, thanks to Chris S. for bringing the Duckhorn and to everyone else that participated and brought their favorite red wine.  Please join next month February 21st and bring a bottle of your favorite White Wine between $35-$50. Salut!

Wine and Cheese Place launches wine-tasting club

Getting a group of friends together for a night of blind-tastingwines is a great way to have some fun while expanding your palate. But who has time to coordinate all those schedules and decide on a convenient location?

Tonight's inaugural meeting, for which there are still a few seats available, will feature red wines between $35 and $50. Next month's (Feb. 21) will include white wines between $35 and $50.
Each participant is asked to bring a bottle that fits the monthly criteria, and everyone will get to taste all the wines. An admission fee of $5 will cover cheese and crackers.

Stone's Original Green Ginger Wine is still made to the same recipe by blending the finest quality raisins and pure ground ginger and is enjoyed in so many ways by millions of consumers each year.

Many enjoy Stone's on its own or over ice, but it is most famously drunk as a 'Whisky Mac' when mixed with whisky. The warmth of Stone's is a perfect complement to the smooth taste of the whisky. This perennial 'Winter Warmer' is the perfect way to relax on the long dark evenings.

Displaying its versatility, at the other extreme, Stone's creates the perfect summer cooler as a long drink combined with lemonade or other mixers such as ginger ale. In the last few years the resurgent interest in cocktails has prompted prestigious mixologists to discover an array of tempting concoctions. Some of the most stylish bars are now creating new drinks by exploiting the, perhaps, unique potential of Stone's Original Ginger Wine.

Not to be outdone, the current generation of chefs have smuggled Stone's into the kitchen to bring the smooth, rich ginger flavour to any number of dishes, sauces and puddings.

Visit the Recipes & Cocktails section to help create many ways to enjoy Stone's Original.

Tomr's Handcrafted Tonic .....$7.99 / 200ml
You use one ounce or less per drink, so there are six to ten drinks worth in a bottle.
Bringing flavor to life is the guiding principle for our lives and our company. It is also the basis for our inaugural product,

Tomr’s Tonic.
It is true that the Gin and Tonic has strayed far from its exotic heritage, however we noted and enjoyed many new small batch Gins that are being produced by micro distilleries. We realized that it was the Tonic that left us wanting. We searched the marketplace for a rich, flavorful tonic that would enhance the flavors of any premium Gin. In essence, we wanted a Gin and Tonic that demanded to be savored, not swilled. When our search proved fruitless, we decided to don our alchemist’s hat and create a new beverage that was true to the original Peruvian Tonic heritage. Our criteria were simple; the ingredient list must include bark from the cinchona tree (the original source of quinine), the flavor had to enhance, not overpower the flavor of any Gin, and everything had to be 100% natural and organic. A pinch of this and a dash of that, plus hundreds of hours of experimentation and tastings resulted in a beautiful amber colored beverage that we lovingly call Tomr’s. We acknowledge that the ingredient list is simple, as all Tonics are. Yet, we have achieved something truly unique; a small batch Tonic Water that delivers exotic flavors that harkens back to the Raj in 1800’s India while melding beautifully with your favorite Gin.

For the perfect Tonic and Gin,(thanks Billy Joel) ...simply follow this recipe:
1 ounce of Tomr’s
2 ounces of your favorite Gin
Add Ice
3 ounces of Seltzer
Stir

…. And Brace Yourself!

2010 Chapoutier Ermitage Cuvee de l'Oree Blanc...$189.99
There are 716 cases of the 2010 Ermitage de l’Oree. I have been following this cuvee since its debut vintage and this 100% Marsanne possesses more richness than most Burgundy Montrachets. Although aged in 100% new, 500-liter demi-muids, the wine reveals no evidence of oak. Honeysuckle, caramelized citrus, white peach, quince and white currant characteristics are viscous and full-bodied, yet the wine possesses striking precision and laser-like focus. This monumental effort is the most opulent and richest of all Chapoutier’s dry whites in 2010.

2010 Chapoutier St Joseph les Granits Blanc...$69.99
With a production of 432 cases, the 2010 St.-Joseph Les Granits Blanc may be the finest white wine made in the appellation. Aromas of tangerine oil, orange marmalade, powdered stones and subtle gun flint as well as smoke jump from the glass of this full-bodied effort. This elegant, rich, full, stunning wine is a tour de force as well as a big-time reference point for what can be achieved from the granite hillsides of St.-Joseph.

Becherovka
Becherovka Original Czech Liquor...$22.99
Becherovka is original czech liquor. It is produced in Karlovy Vary (Carlsbad) in the West Bohemia. It's mysterious recipe is still kept in secret and there are only two persons in the world who know the rights ingredients and herbs used in production. Its lovers prefer to enjoy it pure and ice cold, and thanks to the dynamic growth in popularity of mixed drinks it can be also found in various cocktails (the most popular is "beton" - Becherovka mixed in a refreshing combination with tonic water).

Twisted Pine Big Shot Espresso Stout
Style: Coffee Stout IBU’s: 30 Hops – Northern Brewer, East Kent Goldings
Rated a 95 on ratebeer.com. Big Shot is a favorite of many coffee-loving beer drinkers. This thick Stout is playfully infused with espresso in every pint. It pours jet black with a rich creamy brown head with wonderful roasted coffee and grainy malt aromas. The earthy, dark chocolate flavors of the espresso showcase the flawless balance of the beer.

Twisted Pine Ghost Face Killah....$3.39 / 12oz btl

Style: Chili Beer IBU’S: 10 Hops – Willamette, Northern Brewer ABV 5%
GFK is brewed with 6 zany peppers. Anaheim, Fresno, Jalapeno, Serrano, Habanero and Bhut Jolokia – Otherwise known as the Ghost Pepper. 200 times the heat of jalapenos, Bhut Jolokia are the hottest peppers in the world, a pepper so hot it can be weaponized. So hot that our brewers had to wear masks and gloves to cut them up. Aroma of smoked chillis fills the nose on first whiff, but don’t let it linger to long. Immediately on first taste GFK has a nice golden wheat flavor, but this is only for a fleeting moment before the temperature rises. Just hold on, the warmth of this beer will set in for a long spicy burn. There is only one finish on this beer – HEAT!

Food Pairing: Ice-cream or milk, because that is all that is going to help you with this brew.

Wine Enthusiast #18 Top 100 Wines of 2011

The "Must Have" Wines of the Year. "
A sensational deal can be had with this wine, which opens with crusty berry aromas before shifting to cola, lemon peel and licorice. Tight and structured finesse… on the palate, with cherry, plum, vanilla and spice flavors. Harmonious and smooth, integrated and
just rich enough…"
Rated 92/100 The Wine Enthusiast

"The 2007 Vina Eguia Reserva is picked from 30-year-old vines in Alavesa and sees 24 months in American oak. It has an attractive, very aromatic bouquet with dried herbs, leather, fennel and a touch of peppermint that is natural and very pure. The palate is very well-balanced with supple tannins, crisp acidity and a refined, mocha-tinged finish that is focused and persistent. This is another superbly crafted Rioja from Eguia."
