The 2009 Cabernet Sauvignon is stunning. An exotic, open bouquet melds into dark red fruit in this racy, sexy Cabernet. Espresso, graphite, crushed flowers, spices, mint and licorice are some of the notes that emerge from the glass. All of the elements flow together gracefully to the refined, supple finish. The 2009 will take a few years to come around, but it is dazzling and immensely appealing, even today. The blend is 75% Cabernet Sauvignon, 15% Cabernet Franc, and the rest Petit Verdot and Merlot, all from Forman’s vineyard at the base of Howell Mountain. Anticipated maturity: 2019-2039.
I only tasted three wines with Ric and Toby Forman, but that didn’t stop this tasting from being one of the highlights of the twelve days I spent in Napa Valley. These wines are all about refinement, subtlety and sheer class.

"I'm sure many of you have heard about our collaboration with Sierra Nevada Brewing Company! This 2 year, 2 brewery, 2 family project is about to hit the streets and hopefully make it to a bottle shop near you! Set for National Release in July (I bet you thought you would never hear me say something like that!), BRUX was brewed in Chico (at Sierra Nevada) and will go through their distribution channels, which will, of course, greatly increase your chances of getting a couple of bottles. BRUX is a "domesticated wild ale", or an ale fermented with Belgian yeast, finished by a secondary bottle fermentation with Brettanomyces bruxellensis. It's a little more than 8% alcohol, very dry, earthy, spicy, and tasty. But wait, there's more! About 99% of BRUX was bottled in 750 ml bottles, so there will be almost none available on draft. Almost none, meaning that our brewpubs, Russian River and Sierra Nevada, will have it available on draft in July! The Russian River BRUX draft release is set for July 5th at 5pm at our pub in Downtown Santa Rosa. We will have no bottles or growlers available to go at our brewery due to state liquor laws. Then we move to Chico for Sierra Nevada's release on July 9th where they will have plenty of bottles for sale. Not sure about those details other than Vinnie and I are planning to attend! SINGLE HOP IPA: SORACHI ACE LIMITED RELEASES
Our brewing team is passionate about ingredients. This series was created to celebrate, and to acknowledge the wide variation of hops. The same ingredients and process go into each IPA from the series, with only one difference- what type of hop is used. “This is a great series for both beer aficionados and novice beer drinkers,” comments Brewer Greg Filippi. “It gives the drinker an appreciation of each hop type. They can really pick out the individual flavors in other beers once they taste the hop on its own.”
Varieties will change seasonally. Could be Citra, Admiral, Galaxy, Nelson Sauvin, Galaxy, etc.
Current varieties are:
Sorachi Ace: a Japanese hop known for its characteristic citrusy lemon flavor. Sorachi Ace is the third release of the series this year, following Ahtanum and Citra. Brewmaster Peter Licht is excited about the latest batch. Licht says,”Sorachi is an extremely interesting hop- lots of unusual fruit flavors including lemon and lemon zest. It is also the only hop to come from Japan. One of the reasons we started the single hop beer series was to get to use exotic hops like Sorachi Ace.”

Established in 2009 Hermitage Brewing Company is located in San Jose. Along with producing its own label of small batch beers, Hermitage contracts with beer and soda clients to produce their products. Hermitage is regarded as a professional and reliable go-to contract brewer for many regional and state brewers.
Hermitage is also the bottling source for all Tied House beers. When Tied House closed down its iconic downtown San Jose location in mid-2009, they transferred all their brewing equipment down the road, to South 7th Street, where Hermitage is today. Hermitage soon added a bottling line, complete with disco ball and audio of ABBA’s greatest hits, which automatically starts when the bottling line is turned on.
Hermitage Brewery is becoming widely recognized for its Hoptopia, Maltopia, Ale of the Imp, Single Hop “H” Series IPAs, and craft soda brands. In 2011, Hermitage took four Gold Medals at the California State Commercial Craft Brewers Competition. Celebrator Beer News awarded One Door Quadrupel with four out of five stars in 2011, and Hoptopia DIPA four out of five stars in 2012.
As the new branch of Tied House Brewing, Hermitage is happy to be a part of such a long legacy of great brewers and their award-winning beers. Here is a sneak peak at the Bourbon Barrel Aged Killer Whale - Buffalo Killer Ale! The label has not been approved yet, so some changes might be needed.
This one is Six Row's Killer Whale ageing in a Buffalo Trace Bourbon Barrel since June 11. This one is almost ready to be bottled watch for it soon -- probably released sometime in October.
I also went down to 4 Hands Brewing today and tasted the 100% Vermont Organic Maple Syrup that we put in a Jefferson 18 Year Old Bourbon Barrel - wow, you are going to love this syrup. Should be bottled also sometime in October. Then the barrel will be filled with some 4 Hands Beer -- stay tuned. Also, the 4 Hands Brewing Company Bona Fide Russian Imperial Stout brewed with Goshen Espresso and Whole Vanilla Bean that was filled on February 13, 2012 into an Elijah Craig 12 year old barrel should be bottled within weeks also.

Well, they are very rare, highly rated and hard to get Champagne. We only get a few bottles a year of his stuff because the demand is so high. His Champagnes sell for $200 + per bottle.

The tradition of Greco Brut stems from the occupation of Naples by Louis XII de Valoisi in the 15th century, who demanded that Neapolitan made a Sparkling wine in his honor (he was from Champagne afterall). The local winemakers selected Greco as the suitable grape for this task given the tartness of the grape reminiscent of the Chardonnay of Champagne and the chalky composition of the Tufo soil similar to the terroir encountered in Reims.

The Bienvenues is all about weightless elegance and implied structure, but it is all there in the glass. At times a bit intellectual, the Bienvenues is nevertheless immensely appealing. Layers of soft, perfumed fruit flow effortlessly to the nuanced, feminine finish. A hint of floral honey and almonds lingers on the palate. I can’t wait to see how this ages. "The Marble Brewery is a microbrewery in Manchester, England which makes cask ale from organic and vegetarian ingredients. The brewery consists of a five barrel plant, designed and installed by Brendan Dobbin, former proprietor of the West Coast Brewing Company. The copper and hot liquor tank are situated in the back of the Marble Arch pub behind glass observation windows. The fermenters and conditioning tanks are in the cellars. In 2000 the beers became strictly organic and later the same year they became strictly vegan. Marble's ingredients are sourced from non-intensive agriculture and they do not use isinglass finings, usually made from the swim bladder of the sturgeon, to clear the beer. Despite this the beer is seldom cloudy. Marble's head brewer, James Campbell, has said "We're busier than ever. The beer sells because it tastes good, but the vegetarian side is proving good for business. I've had people tell me that they hadn't been able to drink a pint of beer since they became vegetarians 10 years before. Then they found us." -- Wikipedia
