Lump Charcoal is back....

Back in stock -- two more pallets of Charcoal in stock now!!

Unfortunately, sometimes the best stuff is hard to get, it happens to a lot of things.  We had these two palates ordered on January 3rd and the finally arrived today.  They just have trouble keeping up with demand.   Come and get it while it is here as it is incredible charcoal.

In stock now, one of the best Lump Charcoals
"Highly Recommended" - Dragon Breath - $16.99 / 20 lbs - read review
compare to:
"Recommended" -- Big Green Egg Lump Charcoal - $23.99 / 20 lbs at Straubs - read review

Dragon's Breath Lump Charcoal....$16.99 / 20lbs
From Missouri
Made from Hickory and Oak
This is one of the top rated and one of the few "Highly Recommended" Lump Charcoals by the Naked Whiz's Lump Charcoal Database

"The charcoal is quite easy light, taking 3 sheets in our chimney starter test. This is low compared to other charcoals. There was very little sparking and no popping while the charcoal burned in the chimney starter. The smoke had the classic smell of American hardwood charcoal.

In our maximum temperature test, the charcoal burned at 980 degrees which ranks very high compared to other charcoals. The fire spreads quickly and there was very little sparking and no popping while the charcoal was burning full tilt. When using a MAPP torch to start the charcoal, we did observer moderate sparking AND popping, so you should exercise care in using a torch to start this charcoal.

Finally, in our burn time test, Dragon Breath burned a very long time ranking Very High compared to other charcoals. In fact, it is one of the longest burning charcoals we've encountered. The ash production was Low compared to other charcoals.

In conclusion, we were very impressed with this charcoal. It is easy to light, has that great American hardwood smell, burns hot, burns long, and produces a low amount of ash.

Some new Sam Adams limited releases....

Sam Adams Cinder Bock Rauch Bock....$6.39 / 22oz

Sam Adams Dark Depths Baltic IPA....$5.49 / 22oz

Sam Adams Tasman Red Red IPA....$4.59 / 22oz

Bold, lively, and a bit rugged This wily red IPA gets its character from the Tasmanian hops that are full of grapefruit, pine, and earthy notes creating a bold flavor that threads throughout the taste. The hops are balanced by a core of roasty malts that give this brew body and richness with hints of toffee. This flavorful brew is rounded and smooth with a dry and citrusy hop finish
For this brew, we wanted to experiment with these flavorful and citrusy Tasmanian hops. We came across Topaz and Galaxy hops, grown in Tasmania and Victoria Australia, that give the beer a bold hop character. This flavorful Red IPA is about more than the hops though. Their bright and citrusy character adds punch and a pleasant bitterness to the rich roasty caramel notes of our specialty malts. The combination of these two streams creates a brew that’s earthy, lively, and smooth

Sam Adams Whitewater IPA...6pk
We love hops at Samuel Adams, and while we enjoy traditional IPAs, we thought we might spice things up a little bit, literally, by combining the intense hop character of an IPA with the crisp spicy wheat character of a Belgian-style white ale. The resulting fusion-style brew is Samuel Adams Whitewater IPA. The white ale and IPA combination make this crisp, smooth, yet hop-friendly beer the perfect pairing with a variety of meats and cheeses. Intensely flavored and firm in texture, Blue cheeses need a bold beer like Whitewater IPA to cleanse the palate. The brew's strong hop character also adds an earthiness to the savory flavor of meat.

Sam Adams Noble Pils....6pk
Samuel Adams® Noble Pils is brewed with all 5 Noble hops for a distinct hop character and fresh taste. Deep golden in color with a citrusy hop aroma, Samuel Adams Noble Pils is a traditional Bohemian Pilsner. The honeyed malt character from traditional Bohemian malt is balanced by delicate yet pronounced citrus, floral, and piney notes from the Noble hops. The winner of our 2009 Beer Lover’s Choice® election, this beer was chosen by over 67,000 drinkers for its crisp complexity and refreshing taste.

Another Dogfish Head Collaboration is here!!!!!

A surprise showed up today ---
Only 18 bottles - reserve online now

Dogfish Head / Sierra Nevada Life and Limb #2...$10.99 / 750ml

"What tastes great with Life & Limb?  Life & Limb is a uniquely complex beer, making it a great choice for pairing with food. The rich malts have an interesting sweet/smoky interplay, with earthy spice flavors and notes of dark fruits. This complexity lends itself to pairing with foods ranging from breads and soups all the way through dessert. The strong flavors of Life & Limb can overpower lighter, subtle dishes but work well with darker, spicy flavors such as short ribs, lamb, espresso, molasses, and maple." -- website

Very rare Dom Perignon

In stock now at Forsyth - only 9 bottles available

Dom Perignon vintages are only released after 7 years of aging. A small portion of each Dom Perignon Vintage is kept on the lees long to be released when the cellar master deemed they were ready. The "second release" is the Eonotheque.

Disgorged in 2008 - so 12 years on the lees
1996 Dom Perignon OEnotheque....$329.99 / 750ml
"The 1996 Dom Perignon OEnotheque offers up layers of pastry, lemon, smoke and toastiness. At first deceptively understated, the wine turns positively explosive and layered on the palate, showing remarkable tension, elegance and power, all wrapped around a seriously intense frame. The balance between fruit and acidity is awesome. This is a marvelous DP OEno. The OEno is the same juice as the regular Dom Perignon, except the OEno is aged on the cork while the regular DP is aged in crown-sealed bottles. Once disgorged, the OEenos gets a slightly lower dosage than is typical for the original release DP. This bottle was disgorged in 2008. Anticipated maturity: 2012-2026."

Pegau - Cotes du Rhone

Sélection Laurence Féraud
2009 Côtes du Rhône.............$15.99
This is an amazing full bodied 2009 Cotes du Rhone that consists of 80% Syrah and 20% Grenache.   Laurence Feraud makes the amazing Pegau Chateauneuf du Pape -- so she knows how to make wine.  Her Cotes du Rhone is one of the best buys from the great 2009 vintage.

"In addition to running the legendary Châteauneuf-du-Pape estate Domaine du Pegau with her father Paul, Laurence Féraud manages a successful negociant wine business under the "Sélection Laurence Féraud" label.

Tasting Notes: This classic Côtes du Rhône offers densely layered black fruit aromas with a characteristic spiciness on the nose. Medium bodied on the palate, with ripe tannins, plenty of black cherry fruit, and a long, lingering finish.
Serve With: It is the ideal accompaniment to most weeknight meals and a wide range of grilled meats and vegetables." -- importer

2009 Burgundy

Some new Burgundy in stock at our Ballwin location...

2009 Rapet Beaune Clos Du Roi Premier Cru.....$49.99

Tasting note: The wood is a bit more obvious but it still is not unduly intrusive with fresh, ripe and expressive red berry fruit and warm earth aromas that complement the equally earthy, rich, generous and sappy middle weight flavors that are not only delicious but very Beaune in character. Moreover, there is enough depth presence to make for a lovely drink already yet there is sufficient underlying material to suggest that there is 5 to 7 years of upside potential.
Rated 90/100 Burghound

2009 Rapet Savigny Les Beaune Aux Fournaux...$33.99
Tasting note: This is aromatically much more elegant and finer as well even though the composition of the aromas is almost the same. Otherwise the middle weight flavors are supple, pure and well-delineated before culminating in a firm and persistent finish with notably better complexity.
Rated 90/100 Burghound

2009 Rapet Pernand Vergeleses Les Belles Filles $35.99
Tasting note: This is a ripe Pernand with very pretty aromas of red berries and plum nuances that lead to earthy and mildly rustic middle weight flavors that possess good punch and plenty of verve on the moderately persistent finish. This should drink well young but offer a few years of development potential as well.
Rated 88/100 Burghound

Rare High West Spirits

In stock at Forsyth
High West Whiskey 21 Year Old Rare.....$106.99

This rye whiskey is highly unusual because it was aged in used oak barrels. Almost all American whiskey is aged in new oak and sold as a "straight" whiskey. Used barrels result in a taste profile less influenced by the wood, allowing the more delicate flavors of the rye distillate to prevail. A truly sophisticated sipping whiskey.

We named these "Rocky Mountain Rye" for the whiskey that saloons imported to quench the thirst of the mining boomtowns in the Mountain West. As a modern day saloon, High West is doing the same while patiently waiting for High West's own whiskey to age.

At the end of a meal or the end of a hard day, forget about single malts or cognac, have this 21 instead. Try it with a dessert that pairs well with an American rye's spice, caramel and vanilla like Créme Brulee, fine chocolate, or an apple tart.

John Hansell, Malt Advocate - "This is one soft, smooth rye whiskey. Gentle mint, green tea, cinnamon, nutmeg, roasted nuts, glazed fruit and candied corn, all lie on a bed of vanilla and caramel... I could drink this stuff all day long

In stock at Rock Hill and Forsyth
High West Barreled Manhattan...$41.99
The 36th Vote™ commemorates Utah's role as the deciding vote to end Prohibition. In fact, the Utah delegation WANTED to cast the final vote. "No other state shall take away this glory from Utah" proclaimed the leader of the state delegation and president of the Utah League for Prohibition Repeal. On December 5th 1933 at 5:32 PM EST, satisfied that the thirty-fifth state (Pennsylvania) had ratified, Utah delegate S.R. Thurman cast the last ballot for Utah and the 18th amendment's fate was sealed. High West Distillery chose the Manhattan for this celebration because of its classic appeal and timelessness - it's also our favorite mixed drink! We used the pre-Prohibition recipe of two parts rye whiskey to one part sweet vermouth and two dashes of bitters. We then married the mixture in the rye whiskey's American white oak barrel for 90 days, allowing the flavors to integrate in a well-balanced harmony of the rye's spiciness, the vermouth's herbs, and the bitters' complexity. We hope you take time to celebrate Repeal Day and thank Utah for its role in ending the Noble Experiment.

The High West Barreled Manhattan is made from two parts of High West's Double Rye! Whiskey, one part sweet red vermouth, and two dashes of Angostura bitters for every 2.5 ounce serving.   It was then aged in a 2-year-old rye whiskey barrel for 120 days. The addition of the vermouth lowers the pH and the percent alcohol by volume - both increasing the break down of the oak's hemi-cellulose, increasing the wood sugars that dissolve into the "cocktail" inside. Because a barrel "breaths", there's also some oxidation of the "cocktail." This mellows out the sharpness of the bitters and vermouth, making what we think is a darn fine elixir. We hope you enjoy tasting this as much as we did making it

Green Flash Belgian Pale with Brettanomyces

Finally back in stock...

Green Flash Rayon Vert with Brett...$8.99 / 4pk

RAYON VERT
Belgian Inspired
Pale Ale with Brettanomyces

If Green Flash were founded in historical Belgium, Rayon Vert would have been our flagship brew. A bold layering of hops finds balance from traditional malts. Bottle conditioning with fresh ale yeast and Brettanomyces finishes the beer, adding a delightful effervescence, dryness and continuously evolving character. Rayon Vert is Green Flash.

Continuously Evolving!
The Green Flash team has now released our newest frontline beer, Rayon Vert! This Belgian-Style Pale Ale finished with Brettanomyces has been in the works, refining the process and style for the past 4 years. The idea to make Rayon Vert was sparked by a self-imposed challenge: produce a Belgian-Abbey style ale to unmistakably express the spirit of Green Flash if we were a brewery producing just one beer and operating under the conditions of pre-WWII Belgium.

Stone Old Guardian 2012

In stock now at Forsyth
and online

Stone Old Guardian Barley Wine 2012 Edition...$5.49 / 22oz
Allow us to present you with the Stone Old Guardian Barley Wine, in all its unadulterated glory. We make small adjustments to the recipe every year, just a little bit...as it provides an opportunity to try some different hops or malts. For the 2012 release, we made a deliberate effort to move away from the English hop influence of the past few years, taking out the East Kent Golding hops, subbing in a blend of American Chinook, Calypso and Cascade. Yes, that's right, Cascade. This is the first use of Cascade in one of our beers, and we really enjoyed the hints of grapefruit and pine it contributed to the aroma and flavor. We also bumped up the Maris Otter crystal malt by a mere 0.5%, and it's amazing how much of a difference it made in the color and the upfront body. All in all, it's resulted in a well-rounded beer that is ready to drink now, or can be aged at cellar temperatures for many years. (If you can wait that long.)

Schlafly and The Wine and Cheese Place Bourbon
Barrel Aged Quadrupel
only 204 bottles made!!

We are very proud to release the first in our series of Barrel Aged Beers.  This is a very unique program where we supply local breweries with a Bourbon Barrel and they age a beer in it for 6 months or more and bottle the beer exclusively for The Wine and Cheese Place.   To our knowledge, this is the first and only program like this in the country to have a retailer buy a full barrel of Bourbon to sell and then re-use the barrel to have our own full barrel of beer to sell!!!  These are one of a kind, very rare and limited beers.

Read about our barrel aged program -- click here

The Wine and Cheese Place Barrel Aged Beer Collaboration #1

The Wine and Cheese Place is extremely excited and proud to announce the first release in an amazing series of barrel aged collaboration beers with local Missouri breweries....

We have recently been selecting and purchasing our own barrels of Bourbon.   We taste through a number of barrel samples and then choose which barrel we like the best.   The Bourbon distillery then bottles the Bourbon for us with our own label and normally would clean and ship the barrel to us for display.  But, we thought, why waste this perfect vessel for display purposes, why not use it to age a delicious beer?  We asked the Bourbon distilleries if they would not wash, clean, or do anything to the barrel and just ship it to us as is -- they all said yes!   The Wine and Cheese Place Barrel Aged Collaboration Series was born.

The first in the series is with Schlafly -- St. Louis' original craft brewery....

The Wine and Cheese Place Collaboration #1 with Schlafly
The St. Louis Brewery, Schlafly, paved the way for craft breweries in St. Louis.  Without Schlafly, the booming St. Louis Craft beer scene that we are currently experiencing would not be happening right now.   When this Collaboration Series first germinated, I approached Dan Kopman of Schlafly first because of everything they have done for us and for St. Louis beer scene.  Dan and Schlafly were on board and the wheels were in motion on the collaboration series.

The Life of Buffalo Trace Barrel No.15
Here is the barrel the day it arrived to The Wine and Cheese Place in Clayton, MO on August 5, 2011.  We also got in 22 cases of Buffalo Trace Bourbon that were aged in this very barrel we hand picked after tasting through 5 barrels.   This is barrel  Lot 03 A 06 - Barrel #15.
We will officially call it Barrel #15

Here is a picture of one of the bottles of Bourbon that came out of Barrel #15.
Barrel #15 only enjoyed the comforts of our Clayton store for a few hours (and a few photos) as I loaded it in my truck and delivered it directly to Schlafly's Tap Room downtown because we did not want the barrel to dry out at all.
